Turkish Delight (Rahat Lokum) is a traditional Eastern sweet, also known as a Turkish delicacy. This confection is made from sugar, water, starch, and nuts. It has a soft texture and is typically coated with powdered sugar or coconut flakes. Turkish Delight can contain various additions such as nuts, raisins, orange zest, or different flavorings.

History of Turkish Delight

Lokum, which got its name from the Arabic word "rahat-ul hulkum," meaning "comfort of the throat," was inspired by the words "lukme" and "lokma" in Arabic and Persian, meaning "a piece of food thrown into the mouth."

There are many stories about the past of lokum. It is considered one of the most famous desserts in Anatolia, where it has been produced since the 15th century. However, there are also other versions according to which lokum was introduced to Anatolia only in the 18th century.

Homemade Turkish Delight Recipe

  • Ingredients: 2 cups sugar, 1 cup water, 1 cup starch, juice of half a lemon, 1 cup nuts (e.g., almonds, hazelnuts), crushed, 1 cup coconut flakes or powdered sugar for dusting
  • Preparation:
  • 1. Prepare syrup: In a saucepan, mix sugar and water and bring to a boil. Add lemon juice. Cook over medium heat until the mixture becomes thick and acquires a syrup consistency.
  • 2. Add starch: Gradually add starch to the syrup, constantly stirring to avoid lumps. Continue cooking the mixture until it becomes thick and sticky.
  • 3. Add nuts: Pour the crushed nuts into the mixture and mix well.
  • 4. Form and cool: Pour the mixture into a prepared form, leveling the surface. Let the Turkish Delight cool and set, this may take several hours or even better - leave it overnight.
